Tempting Mediterranean Cheese Bourekas that takes minutes to make

Found throughout the Middle East, North Africa and Southern Europe, Mediterranean Cheese Bourekas are tasty treats that satisfy any time of the day. Originally from Turkey, the most popular fillings in Israel are salty cheese and potatoes, with other fillings include mushrooms, olives (black and green), spinach and pizza flavor.

Mediterranean Cheese Borekas

Kids love these Mediterranean Cheese Bourekas. The addition of spinach may be a turn off for some children (and adults!). For breakfast and brunch, these bourekas can be found throughout Israel. It’s a great food to serve when entertaining guests and for after school snacks.

Mediterranean Cheese Bourekas

INGREDIENTS

  • Pastry (filo, phyllo) dough
  • 1/4 cup mozzarella cheese
  • 1/4 cup feta cheese
  • 1/2 cup spinach (optional)
  • 2 cups plain yogurt
  • 1/4 cup butter
  • 2 large eggs
  • 2 teaspoons baking soda
  • Spoonful of sesame seeds (optional)

DIRECTIONS

  1. Preheat the oven to 400°F and mix the cheeses, yogurt and eggs into a large bowl. Stir in the baking soda (use exact measurement) and thoroughly mix while it bubbles up
  2. Flatten out the pastry dough and cut into 6-inch strips. Melt the butter and spread onto one side of each strip, then spoon on equal amounts of your mixture
  3. Optional: Spoon on the spinach here if you want to add it in
  4. Roll the bourekas into whatever shape you want to bake it in and coat them in the remaining butter and sprinkle sesame seeds. Traditionally we go for triangles (seen here) or you can do round patties
  5. Place bourekas on baking sheet and put in the oven for 20 minutes. Remove when perfectly brown and crunchy
