Dairy-Free and Delicious, the Artichoke Lovers’ Easy Chicken Bake is Perfect for Weeknights and Tomorrow’s Lunch!

I don’t eat a lot of dairy, so I lay off the heavy cheese and heaps of butter that most chicken bakes’ call for. Instead, the Artichoke Lovers’ Easy Chicken Bake recipe uses artichoke juice and natural liquids to keep it moist and tasty.

Artichoke Lovers' Easy Chicken Bake

Our Artichoke Lovers’ Easy Chicken Bake requires about 5-10 minutes of prep time and 30 minutes (optional) marinade. This healthy dinner can be cooked in 40 minutes, making it a perfect throw together once you get back from the office. This recipe keeps well in the fridge, so leftovers for tomorrow’s lunch or dinner will be almost as tasty as the night before. I’ve made it before with bay leaves, but those are entirely optional. The flavor from the artichoke is more than enough to carry this dish. And, as mentioned before, because there is no dairy in this recipe, nor mayonnaise, it is a healthy alternative sure to please the entire family.

Artichoke Lovers’ Easy Chicken Bake

Marinade Time: 30 minutes (optional)

INGREDIENTS

  • 1 (~30 ounces) can artichoke hearts (can use glass jar as well, so long as you have around 25-ounces minimum)
  • 8 chicken tenderloins or halved chicken breasts
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 12 small bay leaves (optional)
Artichoke Lovers' Easy Chicken Bake

Marinade time depends on your schedule. We recommend around 30 minutes.

DIRECTIONS

  1. In a large bowl, mix chicken, spices, artichoke and pour juice (up to just about covering the chicken and artichokes) over the entire mixture. Stir and marinade for 30 minutes
  2. Preheat oven to 375°F
  3. Transfer to medium-large glass baking sheet and cover with foil
  4. Cook in oven for ~40 minutes. Take out and stir at the 20-minute mark

*Always use caution when taking foil off of a baking sheet as the steam from the food will rush out
**If desired, bake the last 10 minutes with the foil off to ensure food is well-cooked. Stir, take a piece of chicken out randomly to make sure it is fully cooked.
